Cat Fighting takes the calmest mob in the game and gives it a temper. Cats start needling each other, with hissing and aggressive posturing that sometimes tips over into a full scuffle while you are off doing something else entirely. Nothing about how cats work actually changes, so they still follow you, still sit where you put them and still scare off creepers. They just stop being quite so polite about sharing space.
The brawls are purely for show. No health is lost on either side, so a pair of cats going at it in your base is a performance rather than something you need to break up. That is also what keeps the add-on usable in a long-running survival world, since you can collect as many cats as you like without worrying that the population will thin itself out overnight.
Squabbles kick off on their own between cats that are up and moving around, which means a crowded village or a room full of pets gives you the most to watch. Cats that have been told to sit stay out of it entirely, so you can decide who is allowed to join in just by seating the ones you want calm. The add-on also works with cats that spawned on their own, so there is no need to set anything up before the fights start happening.
A couple of darker options sneak in as well: a shovel will turn a cat into a pancake, and a minecart at speed has much the same result. Whether you treat that as part of the fun is up to you, but the main draw is simply a world where the cats have opinions about each other.
